Gourmet Recipe
Wild Rice Salad with Ham and Avocado
Ingredients:

  • 3 cups cooked Ankeny Lakes Wild Rice or blend (about 2/3 cup uncooked)
  • 1 to 1 1/2 cups cooked, cubed ham
  • 1 avocado, pitted and cubed
  • 1 tbs. lemon juice
  • 1 large tomato, seeded and cubed
  • 1/2 tsp. garlic salt
  • 1/2 tsp. salt
  • 1/4 cup Durkee's Dressing
  • 3/4 cup mayonnaise
  • Lettuce leaves


Ankeny Lakes Wild Rice

 

Directions:
Toss the wild rice or blend with the ham and avocado, which has been tossed with the lemon juice, and the tomato.

With a rubber spatula, blend the garlic salt, salt, Durkee's dressing and mayonnaise. Gently fold this into first mixture.

Chill several hours to blend flavors. Serve on lettuce leaves. Serves 4 to 6 as a main dish salad.
