"Just adding water, your natural blueberry pancake will be ready in 10 minutes."
Directions:
Place dried blueberries in microwave safe container. Add ½ cup water and microwave on high for 2 minutes. Bring to a boil. Let berries boil for 1 minute. Set berries aside for 5 minutes.
** It is important that the water comes to a full boil.
Blend 3 cups water to pancake mix with wire whip. (Batter will be slightly lumpy.) Fold in blueberries including water used to microwave the berries.
** Note: water amount can be adjusted depending on desired thickness of pancakes.
Pour 1/3 cup of batter per pancake on lightly greased preheated griddle, (medium heat).
Cook pancake until edges begin to dry out. Flip pancake once and cook until golden brown. Approximately 1 minute per side.
Spread with butter, top with syrup and enjoy.
** For a half batch, use 1 ½ cup water to ½ amount of pancakes mix and ¼ cup water to ½ amount of dried blueberries. |
