Directions:
THE NIGHT BEFORE: Trim off silver sinew and excess fat on spare ribs. Place each rack on foil. Apply Huckleberry Steak BBQ Rub or your favorite dry rub liberally to the ribs. Wrap in foil and place in the refrigerator overnight.
AT MEAL PREPARATION TIME: Soak the Oregon Cedar Grill plank(s) for 1 hour. Preheat grill at high. Place the ribs on the planks and place planks with ribs on grill. Cover and cook on high for approx. 10-15 minutes to bring the planks to a heavy smoke. At maximum smoke, turn the barbecue temperature to low. Continue cooking on low for 40-45 minutes. Be sure the barbecue remains covered. No Sauce Please!
When the ribs are cooked, serve from barbecue to table on the Oregon Cedar Grill.
**Caution: The Oregon Cedar Grill will be extremely hot and charred after use. Use cooking utensils to handle the Oregon Cedar Grill. USE ONLY ONCE FOR OUTDOOR USE, FIVE TIMES MAXIMUM FOR INDOOR USE.
